The story
Eden is a modern cuisine restaurant at Oude Torenstraat 6, Waalre, in the Eindhoven region, and Gault&Millau awarded it 15 points in 2026. Chef-owner Herman Cooijmans runs the kitchen, and the menu changes with the season and the ingredients available.
Cooijmans calls his style thrilling, innovative and contrarian. He often works with unusual cuts such as calf brains and beef heart. He has said the easy, safe path is not an option for his kitchen, so he tries combinations his guests may not expect.
Reviewers have praised a bobtail tartare, a fish from the cod family, lifted by licorice notes. A braised cauliflower with salsa verde and caramelized anchovies has also stayed with critics. Bone marrow butter arrives served inside a bone marrow bone, next to the sourdough. Plant-based guests can order a Redefine Meat steak, and the dessert list has included panna cotta with caramelized white chocolate and lemon balm ice cream.
The dining room has natural tones and a neon serpent logo on the wall, a nod to the Garden of Eden name. The private dining room sits at the front of the ground floor, and the main room is at the rear. The wine list holds more than 250 wines, and Lekker500 placed the restaurant at 76 in 2026. In summer, guests can sit on the terrace under lime trees.
