The story
Restaurant Vannu, at Gilzeweg 24 in Bavel near Breda, is a vegetable-focused fine-dining kitchen led by chef Gijs Kemmeren and hostess Iris Saaman. Gault&Millau awarded it 14.5 points for 2026, and the menu draws on regional organic produce and Dutch ingredients.
Kemmeren cooks with sous-chef Pierre van der Zee. He came up through the vegetarian restaurant Herberg de Kop van 't Land in Dordrecht, and he carried that signature into his own kitchen. The menu runs from three to six courses and changes often. Time and technique do most of the work here, turning modest vegetables into full components on the plate.
Lekker500 Top 500 (2026) singled out a slow-cooked radish with a seaweed and bulgur crust, served with kohlrabi and a sauce of fermented kohlrabi and chamomile. The main course of bottle pumpkin, glazed with Jerusalem artichoke and roasted, comes with a spicy green peppercorn sauce. Fennel and Swiss chard arrive with warm fennel sauce and Dutch saffron, finished at the table.
The building on the edge of the Ulvenhout forest was built in 1953 on the site of a farm, and it became Vannu in 2023. The room is simply furnished. Guests can choose an alcoholic, low-alcohol or non-alcoholic drinks arrangement, and the non-alcoholic option pours seasonal juices, syrups and infusions made in-house.
