The story
Senses, a modern cuisine restaurant at Vijzelstraat 45 (1017 HE) in Amsterdam, earned 13.5 points from Gault&Millau in 2026. It sits inside The Albus hotel, and its kitchen pairs North Sea fish and Dutch vegetables with French technique and light Japanese touches.
Renaud Goigoux grew up in Clermont-Ferrand and took over the kitchen in June 2023. He previously worked at Daalder, Breda and RIJKS. The menu leans on seasonal North Sea fish and Dutch produce, with French sauces and precise cooking. Guests can choose a chef's menu of 2 to 6 courses or order from the à la carte. The team also cooks fully plant-based menus.
Lekker500 reviewers singled out the confit leek with béarnaise and Dutch razor clams. The Katsu Sando, a brioche sandwich with katsuobushi, is meant to be eaten by hand. Grilled monkfish tail arrives with beetroot prepared several ways, bound in a beurre rouge. The meal often closes with a green apple sorbet and ginger foam.
