The story
Restaurant MOS at IJdok 185 in Amsterdam serves French-led cooking with international touches, and it holds 1 Star from the Michelin Guide (2026). The restaurant sits at the tip of the IJdok, with panoramic windows that look out over the water and the city.
Egon van Hoof is chef-owner, and the Gault&Millau 16 (2026) entry credits his concentrated brigade with the cooking in the open kitchen. The lunch menu changes with the season, with a separate vegetarian menu built with the same care.
Recent dishes on the printed menus include king fish with haddock liver, sorrel and buckwheat, and asparagus with squid, Zeeland mussel and fenugreek beurre blanc. Veal tenderloin arrives with polenta, beetroot and a piment d'Espelette jus. The strawberry dessert comes with after eight, blondie and mastiha ice cream, and the vegetarian menu includes Jerusalem artichoke with sea buckthorn, figs and Appenzeller.
Earthy tones, comfortable chairs and subtle lighting set the room. Guests can order from a Burgundy cheese course as an option at the end of the meal.
