The story
Tannay sits at Zandhoek 14 in Amsterdam, on the quiet edge of the Realeneiland, where chef Thomas Demuth's classic French kitchen earned a Gault&Millau score of 15 in 2026. The menus lean on the sauces and techniques of Burgundy, and the building is a historic merchant's house.
Thomas Demuth grew up in the village of Tannay in Burgundy, and that background shapes the cooking. Deep sauces and rich preparations come from tradition, with a lighter, more modern touch. His experience includes time at the George V in Paris, and he works alongside patron Alain Caron.
The five-course chef's menu moves from amuse-bouches to dessert. Reviewers have singled out a salmon brioche with beurre blanc and savoy cabbage, and pike-perch cooked skin-on with beef ravioli in a matelote sauce. Dessert pairs lemon with white chocolate ganache and Époisses, a red-rinded Burgundy cheese. On Wednesdays and Thursdays a seasonal three-course Menu du Marché is also served.
The dining space spreads over two floors, with old wooden beams from the building's Golden Age past. In summer, two terraces face the old drawbridge. A semi-private room seats up to 16 guests, and you can also eat at the kitchen counter. The Lekker500 guide placed Tannay in its Top 500 for 2026.
