The story
Johannes is a French restaurant at Herengracht 413h in Amsterdam, where owner-chef Martijn Hendrikse cooks with classical technique and a menu that changes monthly. The restaurant scored 12 points in Gault&Millau 2026.
Martijn Hendrikse has run the canal house for several years and keeps the cooking clean and direct. Reviewers have noted the absence of foams, gels and heavy creamy sauces. Sam Ruizendaal works alongside him in the kitchen. Lekker500 included Johannes in its Top 500 for 2026, pointing to the focus on flavour and sustainably sourced ingredients.
The surprise menu runs from four to seven courses, with matching wines available by the glass. The à la carte offers halibut with dill, cucumber and fennel, and duck liver terrine with brioche, balsamic and apple. Among the main courses, Dover sole comes with parsley, lemon and a butter sauce, and a tournedos is served with duck liver and Madeira. Dessert options include a tarte tatin with cinnamon, star anise and vanilla ice cream, prepared for two.
