The story
De Kas in Amsterdam is an international restaurant at Kamerlingh Onneslaan 3, 1097 DE, in the Park Frankendael greenhouse, and it holds one Michelin star (2026). The seasonal menu is built around vegetables, herbs and fruit grown on site, with the rest sourced from the Beemster region.
Jos Timmer and Wim de Beer have run the kitchen since 2018, continuing the farm-to-table approach that began here in 2001. Their cooking leans on vegetables and herbs from the restaurant's own greenhouses and garden. There is no à la carte list, only fixed lunch and dinner menus that change with the harvest. Gault&Millau awarded the restaurant 16.5 points for 2026, describing light, high-quality cooking built on premium ingredients.
Recent meals have included crispy roasted beets with radicchio, vanilla and black pepper, and a pan-fried fillet with yellow curry and kaffir lime. The vegetarian main course pairs Brussels sprouts with Beemster cheese and a browned-butter beurre blanc. Dessert might be a mandarin sorbet, served alongside hung curd and coffee ice cream. Vegetarian and vegan menus are available, though the kitchen notes a risk of cross-contamination for gluten-free and nut-free guests.
The dining room sits in a former urban greenhouse, where glass walls and a high ceiling let in plenty of daylight. Piet Boon designed the interior, with wooden furniture and large round and long tables. A semi-open kitchen lets guests watch the brigade at work from their seats, and a terrace opens onto the garden in warmer months.
