The story
CUE, at Utrechtsestraat 30A in Amsterdam, is a fusion restaurant that earned one Michelin star in 2026. The restaurant and a listening bar share two floors, with the bar in the basement.
Chef George Kataras runs the kitchen with a bold, fire-driven approach inspired by the pull of open flame. Lekker describes his seasonal plates as finished with subtle grill and fermentation techniques, cooked in an open kitchen. Gault&Millau gave CUE a score of 15 in 2026 and called its rock-'n-roll fine dining approachable and appealing to a younger crowd.
The basement bar takes its cue from Japanese listening bars of the 1950s, with a custom sound system that plays only vinyl, from disco to jazz to R&B. The cocktail list reworks classics with new techniques. Japanese-inspired bar food is served until midnight. Sommelier Mohamed Aous focuses on New World wines from Australia, South Africa and the US, alongside natural wines and a non-alcoholic pairing.
