The story
Segugio is a modern Italian restaurant at Utrechtsestraat 96 in Amsterdam, and Gault&Millau gave it 12 points in 2026 for its cosy, unpretentious style. The menu leans on very fresh produce, sourced locally where possible or imported straight from Italy.
The pasta is made in-house, and the primi set the pace of the meal. Caserecce come with aubergine cream, ricotta and roasted cherry tomatoes. Ravioloni hold green asparagus and ricotta under a parmesan and cashew sauce. Gambero Rosso awarded the restaurant two forks in 2022.
The bavette is Creekstone Farm flank steak with a wine reduction, rocket and Parmigiano Reggiano. The sea bass is oven-baked and served with pear and beet-lemon pesto. Tiramisù and semifreddo close the meal. The wine list covers Italian regions from Veneto to Sicily, and the sommelier chooses the bottles personally.
