The story
De Saffraan in Amersfoort is a French kitchen with Asian accents, housed in a restored 1910 cutter moored at Kleine Koppel 3, 3812 PG Amersfoort. Gault&Millau awarded it 15.5 for 2026, and Lekker500 placed it in its Top 500 the same year.
Chef-owner Kars van Wechem cooks mostly with Dutch ingredients and sources from abroad only what the Netherlands cannot supply. Recent tasting menus have included beef tartare seasoned with Asian spices and coriander, and lamb fillet seared rose pink.
Monique Korteschiel hosts the room and selects the wines, which include bottles from Syria and Lebanon alongside Old and New World labels. Many are poured by the glass, and non-alcoholic pairings are available. The forward cabin seats about fifty guests, and there is a deck terrace for summer evenings.
