The story
De Aubergerie is a French-led restaurant at Kamp 88 in Amersfoort, with international touches and a Michelin Bib Gourmand for 2026. Han and Ingrid Everts run it from a monumental building dating to 1700, on the edge of the historic centre.
Han Everts builds his menus on classic French technique with small international influences. The dishes follow the seasons. The Bib Gourmand choice menu is the everyday route, while the Surprise menu is more adventurous, and the kitchen calls it its incubator. Guests with dietary wishes or allergies, including vegetarian, gluten-free and low-lactose requests, are asked to get in touch before the visit to confirm what the kitchen can do.
Recent guide reports describe turbot served over fregola with a shellfish jus, and a halibut finished with a PX sherry beurre blanc poured at the table. The dining room has oak tables, comfortable armchairs and generous spacing, with seating for up to 28. Ingrid Everts leads the front of house and hosts the wine service, where the list is arranged by flavour profile.
