The story
Sézanne in Tokyo, at 1 Chome-11-1 Marunouchi, Chiyoda City, is a contemporary French restaurant on the seventh floor of the Four Seasons Hotel Tokyo at Marunouchi, and it holds three Michelin stars (2026). British chef Daniel Calvert leads the kitchen, and his French cooking carries flavours gathered from years working across Asia.
Calvert's neo-French style rests on unusual pairings that come from his time abroad. His earlier kitchens include Belon in Hong Kong, Epicure in Paris and Per Se in New York. He credits his team by name: executive sous chef Ashley Caley, sommelier Nobuhide Otsuka and restaurant manager Vivian Chen.
The 12-course tasting menu features bouillabaisse made with saffron from Saga Prefecture. Fugu from Yamaguchi Prefecture is cooked on the bone with fugu shirako and a roasted kegani (horsehair crab) sauce. The sourdough is made with white miso and Koshihikari brown rice, and it is served with cultured butter from Brittany. The menu is listed at JPY 56,925 and is available at lunch and dinner.
André Fu, the Hong Kong artist, designed the dining room. Large windows bring in daylight, and Tokyo's skyline appears after dark. Every seat looks onto the glass-walled kitchen, so guests can watch the cooking as it happens. A private Chef's Table room, linked visually to the kitchen, is available for private dining, with fees on enquiry.
