The story

Nœud. TOKYO: Contemporary French Cuisine in Chiyoda, Tokyo

Nœud. TOKYO serves contemporary French cooking at B1F, 2-5-7 Hirakawacho, Chiyoda-ku, Tokyo, and was listed as Michelin Recommended in 2026. The restaurant takes its name from the French word for "knot," a nod to the way its kitchen links food, nature, society and people.

Chef Naoto Nakatsuka's path

Chef Naoto Nakatsuka trained at the Ecole Tsuji French culinary college in 2000. He worked at a French restaurant in Kyoto before joining TAGAYA in 2002. Later he cooked in France at Auberge La Feniere in Lourmarin and Hameau Albert 1er in Chamonix, then became chef at Kobe St. Morgan Church in 2012 before opening this restaurant in 2020.

Cooking that uses the whole ingredient

The menu relies on produce and fish from regenerative farmers and fishers, along with game animals designated as pests. The kitchen uses roots, leaves, stems and peels, as well as fish and animal bones, skin and offal. The We're Smart Green Guide awarded the restaurant five radishes for 2026.

The room

The counter seats 10 guests, and a private room holds up to six. The dining room is air-conditioned. Lunch and dinner are served as set courses, and the restaurant also keeps a wine list.
