The story
MAZ is a Peruvian-inspired tasting restaurant in Tokyo, on the 3rd floor of Tokyo Garden Terrace Kioicho at 1-3 Kioicho, Chiyoda-ku, and it holds two Michelin stars for 2026. The Peruvian kitchen draws on the country's landscapes, ingredients and ecosystems, and the dining room seats 20.
Virgilio Martínez, chef of Central in Lima, designed MAZ with Mater, the research body he co-founded. The restaurant's menus draw on ingredients and the cultural and ecological knowledge behind them. Yuya Nakamura became head chef in April 2026, after running his own restaurant, INA, in Nara Prefecture.
The signature Vertical Gaze course takes diners on a journey through nine altitudes, and a vegetable-only version follows the same structure. Each course is priced at 28,000 yen before tax. A wine pairing costs 17,000 yen and a non-alcoholic pairing 12,500 yen, with a 10 percent service charge added.
