The story
Nogizaka Shin is a Japanese restaurant at 8-11-19 Akasaka, Minato-ku, Tokyo, serving kaiseki-style cuisine that holds one Michelin star (2026). It opened in June 2016, a three-minute walk from Nogizaka Station on Akasaka Street.
Shinji Ishida, a native of Tokushima, started at a ryotei in 1996 and later worked in Ginza, where he became head chef of a starred Japanese restaurant. He opened Shin in 2016. His menu draws on produce from across Japan, and he pairs ingredients so that each one tastes more like itself.
The dining room is quiet, set away from the noise of Roppongi and Akasaka, with counter seating, a private room and a chef's table. Tobita Yasuhide, who runs the front of house as sommelier and manager, leads the wine and sake pairings. Gault&Millau has awarded the restaurant 16 points (2026). The omakase starts at 25,000 yen before tax and service, and seasonal supplements of 5,000 to 10,000 yen may apply.
