The story
L'AFFINAGE is a French restaurant on the second floor at 5-9-16 Ginza, Chuo-ku, Tokyo, and it earned one Michelin star in 2026 for its high quality cooking. The name means maturing, a word that reflects the owner's aim to let the restaurant and its cooking deepen over many years.
Yasuyuki Takara trained at Hotel Metropolitan before spending two years in Paris and the Savoie region. After returning to Tokyo, he worked as sub-chef at Le Maestro Paul Bocuse Tokyo and head chef at Minamitei, then led the kitchen at Brasserie Lecan when it opened in 2002. He opened his own restaurant in Ginza 5-chome in October 2018.
Lunch is 11,000 yen and dinner is 24,200 yen, both listed with a 10% service charge and tax included. Dinner moves through an aperitif amuse, three appetizers, a fish course, a meat course, a pre-dessert, a grand dessert, petit fours and coffee. A wine or tea pairing is available for 8,800 yen at lunch and 12,100 yen at dinner. The lunch private room seats two to four guests, and the restaurant suggests smart casual dress without a strict code.
