The story
ARMANI / RISTORANTE sits on the 10th and 11th floors of Ginza's Armani building at 10F, 5-5-4 Ginza, Chuo-ku, Tokyo. The contemporary Italian kitchen earned a Gault&Millau score of 15.5 for 2026, and the restaurant is also among the Michelin Guide Tokyo 2026 Selected Restaurants.
Executive chef Bruno Hiruma was born in Mallorca in 1990 and grew up in Barcelona. His cooking brings together Japanese and European influences. He moved to Japan in 2010 and spent five years in Hokkaido, where he learned to build menus around seasonal ingredients. Respect for local produce is the foundation of his approach to the Italian kitchen.
Chef Hiruma's 47 Roots project takes him to producers across Japan's 47 prefectures, and each visit becomes a dish. The second chapter focuses on Nagano, where highland vegetables and buckwheat soba shape the summer menu. On 17 June 2026, Hiruma will host a one-night 4 Hands Dinner with Ryuichi Nishimoto of MANO in Karuizawa, using Nagano ingredients.
