The story
Kutan is a Japanese restaurant at 2-5-5 Shintomi, Chuo-ku, Tokyo, awarded two Michelin stars in 2026 for excellent cooking.
The owner studied Japanese cooking both at home and overseas. He takes in ingredients that classic Japanese kitchens would not use, so long as they taste good. What comes out is orthodox technique shaped by international experience, a style the restaurant calls Tokyo washoku. Gault&Millau scores it 16.5 for 2026.
Dinner is a seasonal course, available by reservation only. It is paced to move from quiet to a lift in energy, and each plate is built around what the season offers.
The name pairs 久 (long-lasting) with 丹 (sincerity, and a red pigment). That red shows up against white walls and ceiling. The room has 13 seats, including a counter, and one private room for four to six guests.
