The story
PRIMO PASSO is an Italian restaurant at B1F, 1-5-11 Tsukiji, Chuo-ku, Tokyo, and holds one Michelin star in the 2026 guide. Its Italian kitchen is built around pasta, with seasonal ingredients and Japanese seasoning.
Chef Tomoyuki Fujioka grew up in a sushi chef's family before turning to Italian cooking. He ran the pasta section at Quattro Passi, a three-star restaurant in Naples. At PRIMO PASSO, he adds dashi and other Japanese flavors to Italian dishes, and uses umami to balance seasoning instead of relying on salt.
The omakase course centers on five pasta dishes and starts at 19,800 yen. Ingredients come from across Japan, chosen by season. The drink list includes more than 200 wines, plus sake and plum liqueur. Pairings come in six- or nine-course versions, such as a tomato pasta served with plum liqueur.
