The story
Est is at 1 Chome-2-1 Ōtemachi in Chiyoda City, Tokyo, where a modern French kitchen earned one Michelin star in 2026. The restaurant sits inside the Four Seasons Hotel Tokyo at Otemachi, and its menus apply French technique to ingredients sourced from across Japan.
Guillaume Bracaval leads the kitchen as Chef de Cuisine. The restaurant says 95% of its ingredients are sourced locally from independent producers across Japan. Pastry Chef Michele Abbatemarco builds desserts around artisanal products and fresh fruit, following Japan's 72 micro-seasons.
Menus run from a three-course option at JPY 9,000 to a nine-course caviar menu at JPY 42,000, with service and tax included. The chef-designed menu changes with the season, and black cod, yuzu and artisanal soy products often appear. Forbes Travel Guide awarded Est Four-Star status in 2026, singling out the peau de soja, a tofu dessert with Japanese citrus that is creamy, crunchy and tangy.
The dining room is decorated in beige and ecru, which keeps attention on the plates and on the view of Tokyo's skyline. A private dining room is available for events, and a terrace is listed among the restaurant's spaces.
