The story
Ensui serves Japanese kitchen cooking at 1-5-12 Nakameguro, Meguro-ku, Tokyo, and the Michelin Guide awarded it two stars for excellent cooking in 2026. The restaurant is built around a single omakase counter, with a private room for small groups.
Owner-chef Ryosuke Ito was born in Sapporo in 1982 and began his Japanese cuisine training in 2003. He apprenticed under Seiji Yamamoto at Ryugin from October 2010, and opened Ensui in December 2020. The restaurant's concept, Onko Soshin, roughly means building something new from a deep study of the past.
The counter seats eight guests, and a separate private room holds up to four. Private hire is available on request. The restaurant asks for smart casual dress, no perfume so the dashi and ingredient aromas stay clear, and it is smoke-free throughout, including the surrounding area.
The omakase course costs 35,000 to 60,000 yen per person, tax included, plus a 10 percent service charge, and the price shifts with seasonal ingredients. Guests can choose from beer, wine by the glass or bottle, whisky, shochu, non-alcoholic drinks, mineral water and tea. Gault&Millau gave Ensui 16 points in 2026.
