The story
Horto, at via San Protaso 5 in Milan, is a modern cuisine restaurant that holds 1 Michelin star (2026) for high quality cooking. The Green Guide also awarded it 4 Radishes in 2026.
Chef Norbert Niederkofler directs the kitchen, with a focus on local production, seasonality and waste reduction. The kitchen works with farmers, breeders and foragers who operate within about an hour of the city. Milanese-style sturgeon with cucumber and dill, and Carnaroli risotto with strawberries and basil, show how that approach looks on the plate.
The signature Negroni dell'Horto uses Campari aged in ex-Bourbon casks. The restaurant serves local water filtered with BWT technology, and for every litre sold it donates €0.50 to b.waterMISSION, which has already funded a well in Singida, Tanzania.
