The story
Onyx is a modern cuisine restaurant in Budapest at Vörösmarty tér 7-8, and Gault&Millau awarded it 15.5 points in 2026. The current dining room opened in spring 2025, after the team began the project in 2020 with a farewell dinner in which guests smashed the old interior with chisels and hammers.
Executive chef Ákos Horváth is named for the kitchen, while the menu itself is credited to the Onyx Creative Community. The restaurant describes its cooking as a modern European kitchen rooted in Hungarian gastronomy. Each course is built around a moment in history, so the food moves forward in time as the evening goes on.
ÆTHER is a multi-course tasting menu that travels from the Industrial Revolution toward a future that feels both utopian and dystopian. One early course is a tribute to ancient Roman cuisine, a fine dining canned fish with garum for umami. Later, a seared ostrich course arrives as the menu reaches the 2100s, and the restaurant treats even small details as part of the story.
Guests sit at a single communal table for 16, which gives the evening a close, shared feel. The wine list is a strength, and guests are encouraged to choose their own path, with wine pairings available. Non-alcoholic pairings are created by restaurant manager Kornél Kárpáti, using house-made ferments and kombuchas.
