The story
Shiraz, at Einern 120 in Wuppertal, is a fine dining kitchen that pairs French technique with Middle Eastern and Asian flavours, and it holds one Michelin star for 2026. Der Feinschmecker also rated it 2.5 for the same year. The menu is a six-course tasting with a small à la carte selection.
Reyad Danah, the head chef, hails from Syria, and his cooking draws on French and Mediterranean foundations. Syrian spices, basil and mint season the lamb, which is served with Turkish-style eggplant glazed in soy-balsamic. He says every dish tells a story, and his Syrian roots show in the seasoning.
The mushroom risotto with dates is the house signature. Turbot is rolled around a delicate salmon farce and served with spinach and robustly spiced couscous. The room is a subtly elegant country house space with beautifully set tables and seating for 16. German white wines pair well with much of the menu, and owner Serkan Akgün also recommends wines from Turkey.
