The story
Die Küsterei sits in a former sexton's house at Kirchplatz 6 in Wallenhorst, part of the Osnabrück area, and its brunch and modern kitchen earned 2 Kochlöffel in the Schlemmer Atlas 2026. The building has been in use since 1884, when it was the home of the church sexton, and the restaurant now offers à la carte dining alongside its Sunday brunch.
The beef tartare comes with fried capers, egg yolk, toasted bread, marinated shallots and a sauce of anchovy and mustard. From the grill, the venison leg is served with a strawberry and pepper sauce, crisp roast bits and glazed young carrots. The zander fillet sits on a vegetable ragout with a Parmesan and spinach salad.
Several dishes are marked vegan on the menu. A carrot mousse with chili rests on an aubergine carpaccio, and saffron ravioli are filled with a cream of Beluga lentils. An oyster mushroom tartlet over parsley root purée finishes with fresh truffle.
The kitchen describes the restaurant as a place that keeps close to tradition while cooking with care for each product. Managing director Arkadiusz Marczak frames the building's past as a welcome for today's guests, and the historic rooms remain the setting for the menu.
