The story
PULS in Köln is a contemporary restaurant and bar at Bürgerstraße 2, in the historic Altstadt beside the Rathaus tower. The Michelin Guide lists it as Recommended for 2026, and the kitchen works in a modern Mediterranean and international register with a sharing menu.
Patron Daniel Gottschlich, a two-star chef, and chef de cuisine Johannes Langenstück developed the menu together. They describe the dishes as creative and purist modern, with a historical thread running through them. The name comes from PVLS, the ancient Roman grain stew that the team sees as the forerunner of polenta. Johannes and Daniel first worked together at Ox & Klee.
The Schlemmer Atlas gave PULS three Kochlöffel for 2026 and singled out beef short ribs, turbot and a Chef's Selection. The plates are meant for the table, so a group can order a little of everything. À la carte dishes, shared plates and bar snacks can be combined as you like.
The bar is built around minimalist elegance and creative drinks. Each week the bar team works with the kitchen to create new food pairings, so cocktails and dishes are designed together. Bar snacks and cocktails continue after the kitchen closes, which suits a later night out.
