The story
Restaurant Haerlin sits inside the Hotel Vier Jahreszeiten at Neuer Jungfernstieg 9-14 in Hamburg, where the French kitchen earned three Michelin stars in 2026. The restaurant, with its seafood and classic French repertoire, has been part of the hotel since 1919.
Head chef Christoph Rüffer builds a 12-course menu, with extra dishes that guests can swap in or add. Many ingredients come from the region, and the plates play sweet against salty and creamy against crisp. Der Feinschmecker awarded the restaurant five stars for 2026, noting how lightly the courses are composed.
The imperial caviar with smoked sea bass, pen shell vinaigrette and cucumber is a good example. The fish stays delicate, the caviar adds salt and cream, and the cucumber brings crunch. The pineapple-saffron sorbet with mezcal, basil distillate and green jalapeño ends the meal with fruit, a little heat and herbal lift.
The neoclassical dining hall overlooks the Binnenalster, and service is led by Marius Jürke. Sommelier Christian Scholz pairs the menu with both established classics and lesser-known bottles. The wine list runs to 1,500 selections.
Guests who prefer a closer view of the kitchen can book the Chef's Table, a 6-course menu inspired by the four seasons, with a sommelier-selected wine pairing.
