The story
Goldener Karpfen, at Simpliziusbrunnen 1 in Fulda, is a family-run hotel restaurant serving international cuisine with regional roots. The Michelin Guide listed it as Recommended in 2026.
Chef Matthias Klein-Arndt cooks classics with light updates, and guests build their own multi-course meal from an extensive menu. Lobster bisque and beef tartare with fries sit alongside turbot with broccoli, truffle foam and homemade pasta. Rack of lamb, duck breast and venison loin cover the heartier side. Dessert might be olive oil ice cream with citrus foam and mango chutney.
The seafood etagere brings oysters, deep-sea prawns, scallops and salmon tartare with truffle mayonnaise and fries. It can be extended with Siberian sturgeon caviar or half a lobster Thermidor with homemade pasta. For two, the candle-light dinner is a five-course menu with matching drinks, prepared by the chef and his brigade of twelve.
Historical photographs and gold-framed mirrors hang in the classic dining rooms, and the tables are set with white linens. In summer, many guests choose the seats around the Simplizius fountain. The wine list runs to 250 selections, 14 of them by the glass, and Der Feinschmecker rated the house 2.5 in 2026.
