The story
Waldblick-Hotel Kniebis, at Eichelbachstr. 47 in Freudenstadt, runs a Swabian and Badische kitchen 900 metres up on the Kniebis. The Schlemmer Atlas awarded the hotel 2 Kochlöffel in 2026.
The restaurant describes its cooking as fine and creative, built on fresh ingredients sourced as regionally as possible. Wine is served alongside the meals. The hotel's own description is short, so the dishes themselves are best discovered on the menu.
The hotel is run by the Finkbeiner family in the middle of the Black Forest. A 1,500 square metre wellness area offers a pool, several saunas and a hydrojet massage bed. Guests can also sit by the fireplace in the Kaminzimmer or spend time in the garden.
