The story
Le Pavillon, the gourmet restaurant of the Dollenberg hotel at Dollenberg 3 in Bad Peterstal, serves French cuisine that earned two Michelin stars in 2026. The dining room sits in a historic Black Forest hotel in Freudenstadt, where the kitchen works through five to eight courses.
Martin Herrmann leads the kitchen and has done so for many years. The classically French menu runs five to eight courses. Guests can also join the kitchen party, a walk through the kitchen with live music and plenty of tasting along the way.
The menu has included scallops with hazelnut, Imperial caviar and a lime vinaigrette. Goose foie gras arrives with apricot, yogurt and classic brioche. Bresse pigeon comes with parsnip, chanterelles, plum and a rich Pauillac jus.
Floor-to-ceiling windows wrap the stylish rotunda, so the Black Forest landscape stays in view throughout the meal. Sommelier Christophe Meyer oversees a wine list of about 600 selections.
