The story
Rebstock-Stube, at Hauptstraße 74 in Denzlingen just outside Freiburg, is a family-run country inn serving Badische and French cuisine. The Schlemmer Atlas awarded it 3 Kochlöffel in 2026.
Axel Frey cooks with the seasons and likes bold flavors and vivid plating. Der Feinschmecker, which rated the restaurant 2.5 in 2026, hears an occasional echo of nearby Alsace in his style. The menu mixes house classics such as a fish soup with aioli and a calf's head salad with rösti. A goose liver terrine comes with rhubarb, pepper caramel and brioche.
Among the mains is Dover sole for two, served with lemon, tomato, spinach and buttered potatoes. Veal saddle arrives with morels, celery and a semolina pocket. The salmon soufflé sits on leaf spinach. A set menu follows the same line, from calamari or terrine through zander to the veal saddle, then dessert and petit fours.
Guests can sit at the table d'hôte, a long wooden table in front of the kitchen with a view of the cooks. On Wednesday and Thursday it hosts a three-course menu du jour. The dining room is done in beige-gray pastels, and in good weather the garden is open. The wine list leans on Ortenau, Markgräflerland and Kaiserstuhl estates, with bottles from France and Switzerland.
