The story
Hawara, at Dreikönigstraße 8 in Freiburg im Breisgau, is a small modern cuisine restaurant that earned one Michelin star in 2026. The kitchen works with produce from its own vegetable garden, and the menu changes with the season.
The menu follows what the fields and garden produce, and the kitchen gives ingredients time to mature before they reach the plate. On Wednesdays, a rotating à la carte bistro menu is served. Thursday to Saturday, guests can choose a Carte Blanche menu or a longer sequence of about ten courses, with omnivorous and vegetarian versions. The Schlemmer Atlas awarded the restaurant 3 Kochlöffel for this approach.
Recent printed menus have listed beef tartare with parsley and brioche, trout with Vin Jaune, green cabbage and nduja, and braised venison with Brussels sprouts and hollandaise. Dessert has been lemongrass crème brûlée with pear. The vegetarian course list has included kohlrabi with asparagus and tarragon, and cauliflower with quince and spruce needle.
The wine list focuses on natural and traditionally handcrafted bottles. Hawara also offers its own alcohol-free pairing, made from ferments, essences and extracts.
