The story

Gasthof Zum Roten Bären in Freiburg: Badische and Austrian Cooking

Gasthof Zum Roten Bären sits at Oberlinden 12 in Freiburg im Breisgau, where the Austrian and Badische kitchen holds 2 Kochlöffel in the Schlemmer Atlas (2026). The house traces its history to 1120 and still operates as both a hotel and a restaurant in the old town.

Badische cooking with venison and trout

The kitchen works in the Badische tradition, with hearty dishes and regional produce. The Schlemmer Atlas singled out the venison and veal rack and the Black Forest trout fillet. Fresh calf's liver appears on the menu on Wednesdays, and Black Forest trout on Thursdays, alongside the evening carte. A set lunch menu is also offered.

Historic dining rooms and a long history

Some of the dining rooms, called Stuben, are partly original to the building. Each has its own mood, so guests can choose a more formal or a more rustic table. The team also runs the hotel's 25 rooms and suites, which come with a homemade breakfast.
