The story
Die Halde is a Baden country kitchen at Halde 2 in Oberried, near Freiburg, on the Schauinsland ridge at 1,147 metres. The Michelin Guide lists it as Recommended for 2026.
Chef Harald Derfuß and his team cook regional dishes with some international influences on the Baden tradition. Most ingredients come from producers in the area, and the game is hunted in the surrounding hunting grounds. The water comes from the house's own mountain spring.
The Schlemmer Atlas awarded the house 2.5 Kochlöffel for 2026 and singled out the locally hunted game, the porcini risotto and the Dover sole. Guests choose from a menu that changes daily and a short à la carte card. Gluten-free and lactose-free dishes are part of the standard offering, while other allergies can only be accommodated within limits.
Bright dining rooms look out over a wide view, and historic Stuben carry Black Forest character. On warm days guests can sit on the terrace, which depends on weather and availability. Reserved tables are prepared indoors. The building has a wooden shingle façade and traces its history back to a farm first mentioned in 1142.
