The story
Schmidt's sits at Moritzburger Weg 67 in Dresden, where the kitchen serves German cooking built on Saxon produce and holds a 2026 recommendation from the Michelin Guide. The restaurant's menus draw on regional farms and gardens, with chef Olaf Kranz leading a seasonal approach that changes often.
Olaf Kranz works with farmers and growers in Saxony and the Dresden surroundings, many of whom the kitchen has known for years. Grass-fed beef and Wiesenkalb come from local farms, herbs from the Elbe meadows, and bread from a baker in Hellerau. The restaurant is a Slow Food partner, and its lunch and dinner cards turn over roughly every two weeks.
The XL potato dumpling filled with Saxon veal is the house signature, with a soft golden shell and fillings that change by season. Other plates on recent menus include a wild lasagne with Mediterranean vegetables, Langburkersdorf char with vanilla foam, and a peach tian with salted caramel. A vegetarian main course is always on the card.
The Schlemmer Atlas awards Schmidt's two Kochlöffel for 2026, and its five-course menu reflects the same relaxed rhythm. Service is designed to suit a long lunch as easily as a special evening, and the room keeps a bistro ease while the plates are plated with care.
