The story
Genuss-Atelier, at Bautzner Straße 149 in Dresden, holds one Michelin star (2026) for its modern cuisine. Marcus Blonkowski leads the kitchen, and his sister Nicole looks after the wine.
Guests can order à la carte or hand the decision to the kitchen with a surprise menu of four to eight courses, served table by table. You name what you would rather skip, and a vegetarian version is available. The winter card includes duck liver with pear and port wine, and suckling pig with tuberous chard and Bohemian dumplings. Monkfish arrives with cauliflower and turnip greens.
Nicole Blonkowski's list draws on the Saxon Wine Route, Saale-Unstrut and Brandenburg. A section of regional rarities features estates such as Schloss Proschwitz, in quantities of only a few bottles. A wine pairing runs alongside the surprise menu. The drinks list also comes almost entirely from regional suppliers.
The dining rooms sit on the villa's lower level, where exposed masonry and sandstone vaults give the space its character. The Schlemmer Atlas (3.5 Kochlöffel, 2026) notes how the natural stone columns and vaulted ceiling contrast with the modern menus. The restaurant has four areas: a lounge, the Gewölbe, a business room and a small private Séparée.
