The story
Zucker serves a contemporary menu at Frankfurter Straße 2 on the ARTmax grounds in Braunschweig, and the Michelin Guide listed it as Recommended in 2026. The restaurant sits in a former sugar refinery, and its kitchen pairs familiar German dishes with more experimental plates.
Alexander Riehl leads the kitchen with his team and greets guests as host. The Michelin inspectors praised the cooking for its flavor and singled out grilled duck breast with turnip. Riehl describes the approach as a balance between the familiar and the experimental, so regulars will recognize classics that arrive with a twist.
The menu includes Tafelspitz with a potato and turnip mash, horseradish sauce and beetroot, plus a crisp pike-perch with lentil vegetables and balsamic. Veal Wiener Schnitzel and a winter green kale with Kassler and Braunschweiger Bregenwurst show the regional side of the card. Dessert ranges from crème brûlée with Madagascar vanilla and raspberry to a hazelnut cake with apple and caramel.
The former refinery gives the dining room an industrial character, and the restaurant has space for private parties. Schlemmer Atlas awarded it 2.5 Kochlöffel in 2026, noting the parking right outside. The wine list leans toward Austrian bottles, and the dinner menu offers a three- or four-wine pairing.
