The story
die kleine Linde, at Humboldtstraße 27 in Braunschweig, serves modern cuisine in a historic Art Nouveau building. The Schlemmer Atlas gave it 3 Kochlöffel in 2026, and the Michelin Guide lists it as a recommendation for the same year.
Head chef Valentin Thesing leads the kitchen. The restaurant describes its approach as craft, aesthetics and passion, with plates that are detailed but never overworked. The cooking mixes creative ideas with an international range of ingredients.
The main menu pairs salmon with cucumber and dill, pork cheek with lobster and carrot, and pumpkin with miso beurre blanc and sage. A vegetarian menu called Botanischer Garten includes celeriac with truffle and apple, and spinach with corn and egg yolk. It must be booked in advance, so mention it when reserving. Both menus come in five or seven courses.
The dining room sits in the historic building, and the mood is relaxed rather than formal. A wine pairing is available with the menus, which suits guests who want each course matched to a glass.
