The story
Rutz in Berlin serves modern cuisine at Chausseestraße 8 in Berlin-Mitte, and the Michelin Guide awarded it three stars in 2026. Executive chef Marco Müller builds his tasting menus around regional produce, with the wine pairings and service designed to match.
Müller works with root vegetables, game and herbs, reducing each to its essence before reworking it. Flavors such as spruce, elderflower and vinegar tree meet fermented and aged elements. The Schlemmer Atlas calls the 13-course menu an inspiring progression, and the style favors clarity over richness.
The Inspiration menu costs 360 euros for 13 courses, or 340 euros for 12 without the signature final course. Dishes on the current list include trout with kohlrabi and charcoal, rabbit with winter radish and nasturtium, and Challans duck with roasted cabbage and walnut. A vegetarian version uses sunflower tofu in place of fish and meat. Sommelier Sebastian Höpfner pairs each course with wine from a list of 700 selections.
Kitchen, storeroom and dining room share one space, with stone walls of Brannenburger Nagelfluh separating the service areas. Guests can eat one course standing at a counter facing the pass and watch the brigade work. The restaurant opened in 2001 as a wine bar and remains family-run without an outside investor.
