The story
Schatzhauser, at Tonbachstraße 237 in Baiersbronn, serves Swabian and Badische cooking within the Traube Tonbach. It holds a Michelin Bib Gourmand for 2026, the guide's mark for good quality at a fair price.
Florian Stolte leads the team. Swabian-Badische classics share the menu with favourites from further afield, and steak cuts come off a lava stone grill. The Schlemmer Atlas awarded 2 Kochlöffel in 2026 and describes the house as relaxed and down-to-earth in a modern setting.
Trout à la meunière is roasted whole and served with almond butter, shallot spinach and chive potatoes. Homemade Maultaschen come in beef broth with a potato and cucumber salad. Black Forest lentil stew and sausage salad keep the menu rooted locally, while a Wagyu Massaman curry with roti heads somewhere else entirely. Dessert might be Kaiserschmarrn with baked apple compote, paired with a glass of Jurançon moelleux.
Windows look out over the Tonbach valley. Fabian Clement and Slavyana Ivanova lead the service team, and the wine list is put together with some care. The name belongs to the good forest spirit in Wilhelm Hauff's Black Forest tale "Das Kalte Herz", who grants people their wishes.
