The story
Engelwirts-Stube sits at Rechtmurgstraße 28 in Baiersbronn, inside the Engel Obertal hotel in the northern Black Forest. The Swabian kitchen here earned a Michelin Recommended mention for 2026, and it is one of the reasons the restaurant is worth a table on its own.
Chefs Markus Wolf and Peter Müller send regional Swabian dishes and international creations to the table every day. Head chef Markus Wolf works directly with farms, butchers and fisheries. He often drives to the wholesale market himself to choose the produce.
The kitchen also sources from regional and local producers wherever it can. The team adapts dishes for guests with intolerances or vegetarian and vegan needs, and they will suggest alternatives on request.
The sample menu lists marinated salmon with honey-mustard sauce, avocado cream and garden cucumber. Cream of morel soup comes with chervil cream, and pink roast beef arrives with béarnaise, sweet potato purée and fried chanterelles. Fillet of zander is served with Riesling sauce over saffron potato purée.
Dessert might be strawberry tiramisu with sabayon and espresso brittle ice cream, or a selection of German and French cheeses from the buffet.
The rooms are a mix of classic country house style and modern design, with Black Forest details throughout. The Schlemmer Atlas, which awarded 2.5 Kochlöffel for 2026, describes nostalgically elegant rooms with floral-patterned benches and wood paneling.
Some rooms can be booked fully for private events, and certain rooms open onto the sun terrace. Up to 20 guests can meet in the adjoining conference room for business dinners or celebrations.
