The story
La Bourse et la Vie is a bistro at 12 rue Vivienne in Paris's 2nd arrondissement, listed as Recommended by Michelin in 2026. The Paris bistro builds its menu from Daniel Rose's repertoire of French classics.
Daniel Rose, chef of Le Coucou in New York and owner of Chez La Vieille in Paris, has cooked in this quarter since 2015. The kitchen follows the bourgeois bistro cooking he loves most, offered as a daily lunch plate and an à la carte dinner.
Leeks come in vinaigrette with crushed Piedmont hazelnuts, and monkfish tail arrives with pan-fried new potatoes and a rosemary cream. Veal pot-au-feu is served in a copper pot, and calf's head comes with ravigote sauce. The room is green-grey velvet under dim light, with large speckled mirrors.
