The story
Tanière³ serves modern Canadian cuisine at 7 rue du Don-de-Dieu in Québec, and the Michelin Guide awarded it two stars in 2026 for excellent cooking. The restaurant sits in the historic vaults of the Leber and Charest houses, between the St. Lawrence River and Place Royale.
Chef and owner François-Emmanuel Nicol leads the kitchen, working beside dining room manager and co-owner Roxan Bourdelais. Their brigade includes chef Anthony Vien, sous chef Clément Cavoret and pastry chef Jérémy Billy. The restaurant dates its tradition to 1977 and describes its aim as pushing the boundaries of Quebec dining.
The menu stays a mystery until the plates arrive, running between 12 and 18 courses. Five foragers working in different regions supply wild plants. The kitchen also draws on Canard Goulu duck, Ferme Orléans poultry, Les cerfs Jasmyr venison and vegetables from Les Jardins d'Inverness. Nicol chooses the vegetable seeds each winter with a childhood friend who grows them.
Guests can book the vaulted dining room or the chef's counter, which sits close to the brigade at work. Head sommelier Jonathan Ross and head bartender Simon Faucher design the pairings, which include wines and non-alcoholic cocktails. Wine Spectator gave the list its Best of Award of Excellence in 2020.
