The story
L'Orygine is a contemporary Canadian restaurant at 36 rue Saint-Pierre in Old Québec, where chef Sabrina Lemay builds menus around local producers. The restaurant received a Wine Spectator Best of Award of Excellence in 2025.
Sabrina Lemay leads the kitchen as chef owner, and her cooking starts with the farms around her. Herbs come from Île d'Orléans, mushrooms from Charlevoix, and vegetables from Inverness. The kitchen works with organic produce, aromatic herbs and heritage grains, and the dishes shift with the seasons and the harvest.
The six-course discovery menu shows the full range of her cooking, while the à la carte list suits sharing. Many dishes come in fully vegan versions, so a table can mix plant-based and meat or seafood orders without compromise. The Michelin Guide listed L'Orygine as Recommended in 2026.
The dining room has turquoise banquettes, a green living wall and plenty of natural light. Dining room manager Philippe Veilleux oversees the floor, and head sommelier William Guay selects the wines that pair with the menu. Signature cocktails use regional ingredients, and guests can also order a mocktail pairing.
