The story
Lasai serves modern Brazilian cooking at Largo dos Leões 35 in Humaitá, Rio de Janeiro, and holds two Michelin stars (2026). The restaurant runs a single 15-course tasting menu for ten guests at one L-shaped counter.
Rafael Costa e Silva leads the kitchen with a focus on vegetables, while fish and meat play a supporting role. His wife, Malena Cardiel, runs the room. The restaurant moved in 2022 from a colonial townhouse in Botafogo to a smaller space nearby, and it has since placed 28th on The World's 50 Best Restaurants list (2025).
The menu draws on two gardens, one in Itahnangá in the city and another in Rio de Janeiro state, along with seasonal organic produce and fresh seafood. A course might pair chayote squash with romanesco broccoli, borage and scallops, or palm heart with cashew nuts, enoki and king oyster mushrooms. Before each course, staff show the raw ingredients and invite guests to smell, touch and taste them. Plating is pared back, and the execution is stunning.
Sommelier Maíra Freire builds the drinks pairing around biodynamic and natural wines, with many Brazilian bottles. Reds come from Rio Grande do Sul, vermouths from São Paulo, and one mead is made from wild, native honey.
