The story
Au Dos de la Cuillère in Verviers, Belgium, serves seasonal country cooking at rue Jules Cérexhe 10, and it holds a Michelin Bib Gourmand (2026) for good quality, good value cooking.
Sophie and Martin opened the restaurant on 5 September 2019 after training at Lameloise in Burgundy. The kitchen works with growers and makers across the region, including Inven'Terre in Dolhain for vegetables, Ferme Ancion in Saive for meat, and Fromagerie du Sarté in Sart for cheese. Gault&Millau awards the restaurant 13 points (2026) for its fair, regional cooking.
The set menu comes in two, three or four services, priced at 40, 48 and 60 euros. The à la carte has pork raised on straw with Jerusalem artichokes and röstis, plus fish of the day with mushroom duxelles. Dessert might be rice pudding with jam or roasted pear with almond and yoghurt cream.
