The story
Manoir de Lébioles stands at Domaine de Lébioles 1/5 in Spa, a country house serving Belgian and French cuisine in the Ardennes. Gault&Millau gave it 13.5 in 2026, and the Michelin Guide lists it as Recommended for the same year.
Michaël Albert began in Brussels at L'Écailler du Palais Royal, working alongside the two-Michelin-star chef Attilio Basso. He later became sous-chef at Le Pain et le Vin in Uccle, cooked in a five-star London hotel, and spent time at L'Héliport in Liège. In 2019 he catered Belgium's King's Day for 750 guests at the Belgian Embassy in Doha.
Albert visits producers and tastes in the field, and that habit produced a fir bud pickle he counts among his creations. A spell at the health-minded Rouge Tomate taught him to start from the product's history and nutritional value. Gault&Millau describes the kitchen as elegant yet familiar and fully up to date. A meal there opens with a foie gras and European lobster terrine finished with a rose vinaigrette.
The manor has 16 rooms and suites, some looking over the courtyard and others over the woods. It also has a spa, called Spa of Spa. The Signature stay includes a Manorial menu at the restaurant, so dinner can be part of an overnight visit.
