The story
Sense is a modern French restaurant at Fortenstraat 62 in Waasmunster (Sint-Niklaas), and it holds one Michelin star in the 2026 guide.
The restaurant occupies a stately villa surrounded by greenery. Gault&Millau gives it 16 points for 2026 and credits chef Michiel De Bruyn with cooking of precision and flair. Hostess Frederika Vandeleur sets the pace in the dining room with what the guide calls elegant calm.
The French kitchen works with the market, so prices can shift slightly. Starters include sunfish ceviche, frog legs with wild garlic, and pan-fried langoustine "Guilvinec". Mains run from guinea fowl "Pertuis" with asparagus to a fideua of wild sea bass, Holstein entrecote and lobster in open ravioli. Desserts include a dame blanche and a café glacé, both made to order, and a cheese trolley is also available.
Weekday lunch comes as three courses for 69 euro or four for 89 euro. In the evening, the carte blanche menu is a chef-selected walk through the carte, in five courses (120 euro) or six (145 euro). On Friday and Saturday evenings only the six-course version is served. When the weather allows, selected dishes are served on the terrace.
