The story
La Cuisine d'un Gourmand is a French restaurant at Avenue Général Gracia 8 in Profondeville, in the Namur region of Belgium. The 2026 Gault&Millau guide gives it a 14. Chef John Maes runs the kitchen in a house beside the Meuse.
Maes says gastronomy rests on three things: the product, the cooking and the seasoning. He came to this slowly. Early on he tried to impress with beautiful plates, then returned to the basics. His wish to cook goes back to his grandfather, who reheated his lunches when he was a boy. The menu changes with the seasons and with the chef's own cravings.
The kitchen names its suppliers openly. Goat cheese and mushrooms come from Ferme Bijard, trout from the Pisciculture Le Cheneau in Annevoie, and eggs from Ferme Lehaire in Assesse. La Voie Lactée, a cheesemaker in Profondeville itself, supplies the cheese. Maes says he visits artisans like a child in a toy shop.
Gault&Millau describes a modern room with understated elegance and a terrace with a calming view. It calls the cooking creative without being extravagant, built on local seasonal produce. Michelin lists the restaurant as Recommended for 2026. Beyond the terrace, the house offers table service and private parties.
