Salto! is a bistro at Rechtestraat 18 in Lier, named in the Michelin Guide's recommended selection for 2026. The kitchen works from the classic French repertoire and the seasons.

The kitchen

The house describes its cooking as a selection from the classic French bistro kitchen. Ingredients come from chosen suppliers and growers, and the menu follows the rhythm of the seasons. Gault&Millau scored the restaurant 13.5 in 2026.

On the plate

Starters on the menu include Zeeland oysters with shallot vinaigrette and dill, and a gratinated scallop with Comté, vin jaune and celeriac. Hand-cut Holstein beef tartare comes with lettuce and fries. For two, there is côte de boeuf with pepper sauce, or sea bass in pastry with chicory and beurre blanc. Dessert might be a tarte citron or a chocolate moelleux with vanilla ice cream.

The wine list

Many of the wines are imported by the house itself, from growers in Roussillon, Austria and Australia. By the glass, expect bottles such as Lampyres' Des Sens from Roussillon or a Riesling from Bink in Adelaide. An orange wine from Yetti & The Kokonut sits alongside the whites and reds.
